A Letter To You

Hey folks, Al here!

Let me tell you how this whole thing started.

Picture this: a 1991 Tacoma waterfront cart, frosty shaved ice, and a whole lot of hustle. Then winter winds bit, so I swapped snow cones for sizzle, gourmet sausages that became an instant waterfront obsession.

By ’95, Seattle Sports Shop was literally breaking down walls to make room for my cart outside the Kingdome!

When did it kick off? A 2000 handshake with Uli, who makes my concepts come to fruition. Together, we rewrote Seattle’s street food rules: salmon sausages for health-conscious fans, the Hickory Bacon Beer Brat (crowned #1 by Seattle Eater in 2015), and the preservative-free “Seattle-style” recipe that’s fueled gameday cravings since 2017.

The secret ingredient? Three decades of grill-side kinship. Kids who devoured Al’s dogs in the ’90s now bring their kids. One of them, now a father told me: “We only go to Al’s.” (One of my proudest moments)

Today, Al’s stands tall through Uli’s craft, zero shortcuts, and crowd-loved hits like the Seattle Cheesesteak. But behind every smoky bite is you – the fans who turned a cart into a community.
